Ingredients

     Rava                          ½ cup

     Nattu sakkarai           ½ cup

     Cardamom powder    ¼ tsp

     Ghee                         ¼ cup

     Oil                             3 tbsp

     Cashew nut              15 no

     Raisins                       6 no

     Sapota pulp              ½ cup

 

Method

  • First heat a vessel with oil and ghee. Once ghee heats, add cashews. Saute well.  
  • Then add raisins. Fry till nuts and raisins turns golden brown. Then drain the nuts and keep it aside.
  • In the same pan add rava. Roast it well. Then add 1 and ¼ cup of hot water. Mix it well.
  • Let it boil. Then add cardamom powder. Keep stirring without any lumps. 
  • Once it cooks well, add sapota pulp. Mix it well. Then add fried nuts and raisins. Mix it well. Switch off the flame.

                            

                                  Serve hot.

                                  Wheat  rava veg dosa

Ingredients

       Wheat flour                              1 cup

       Wheat rava                              ½ cup

       Rice flour                                 4 tbsp

       Red chilli powder                     ¾ tsp

       Asafoetida                                ¼ tsp

       Grated carrot                            ¼ cup

       Grated cabbage                       ¼ cup

       Finely chopped onion               ¼ cup

       Finely chopped coriander         2 tbsp

       Required salt

   For seasoning

      Sesame oil                                 1 tbsp

      Mustard seeds                           ½ tsp

      Urad dal                                     ½ tsp

      Asafoetida                                  ¼ tsp

      Red chillies                                2 no

      Curry leaves                              1 sprig

 Method 

  1.  First grind the wheat rava in a semi coarse powder.
  2. In a mixing bowl add all the items and required salt.
  3. Add enough water to get dosa batter consistency.
  4. Heat a small pan with oil, once oil heats add seasoning items. 
  5. Then add seasoning to the batter. Mix it well.
  6. Heat a dosa pan and spread the batter. Sprinkle with oil.
  7. Cook both sides well.

                            Healthy wheat rava veg dosa ready.

                                  Serve hot with chutney

For grind

       Vallarai keerai                              30 no

       Grated coconut                            ¼ cup

       Black pepper                                1 tsp

       Tomato                                         1 small piece from ½ tomato

       Required salt

For seasoning

      Sesame oil                                 1 tbsp

      Mustard seeds                           ½ tsp

      Urad dal                                     ½ tsp

      Red chillies                                2 no

     Curry leaves                              1 sprig

Method

  1. First the grind the given items with enough water.
  2. Heat a small pan with oil,once oil heats add seasoning items. Once seeds are popped add red chilies and curry leaves. Switch off the flame. Add seasoning to chutney.

                                      Serve it with Idly or dosa. 

 

Schezwan fried rice without soy sauce and vinegar

                                        Schezwan Fried Rice without soy sauce and vinegar

 

Ingredients

          Basmati  rice                         2 cups

          Garlic finely chopped                 1 tbsp

          Carrot finely chopped                 ¼ cup

          Beans finely chopped                 ¼ cup

          Capsicum finely chopped           ¼ cup  

          Cabbage finely chopped            ¼ cup

          Spring onion white                     3 tbsp

          Spring onion green                    3 tbsp

          Schezwan sauce                        2 tsp

          Gingelly oil                                  3 tbsp

          Required salt   

FOR SCHEZWAN SAUCE  :Schezwan Sauce without vinegar and soy sauce

Method

  •    First soak the basmati rice for 20 min. Then wash it well. In a pressure cooker add 2 ½ cups of water, rice, salt and 1 tsp of oil. Mix it well. Pressure cook it for 1 whistle. After pressure release cool down the rice to room temperature. Keep it aside.
  • Heat a pan with oil, once oil heats add chopped garlic. Saute well. Then add all the veggies one by one. Add capsicum in last. Saute for 1 min, then add salt. Mix it well.
  • Then add schezwan sauce. Mix it well. 
  • Then add cooked rice in 2batches , mix it well.
  • Garnish with some spring onion greens.

                                                      Serve hot
