Ragi kuthiraivali koozh(Barnyardmillet and ragi)
Ragi flour 1 cup
Kuthiraivali flour ¾ cup
Curd ½ cup
Leftover rice(palaya sadam) ¼ cup
- Mix the flours in a vessel. Add 2 ½ cups of water. Mix it well without any lumps.
- Heat this vessel. Keep stirring without intervals. If water is not enough add more hot water. Once the flour cooks well, switch off the flame. Let it cool down room temperature.
- After cooling down add neeragaram( leftover rice water). Mix it well.
- Fermant for overnight.
- Next morning in a jar add curd and leftover rice. Grind well. Then add this curd mixture to the koozh. Add enough salt. Mix it well.
Serve it with mango, small onions and chilis.
